2007 ReserveCabernet Sauvignon Stone Tree Vineyard
“The Stone Tree Cabernet opens with cherry and blackberry aromas that lead to a palate displaying intense fruit flavors accented by characters of spice and licorice. The firm, yet ripe and sweet tannins perfectly complement the creamy texture. Sourced from Block 14 in the vineyard, the rich, powerful structure of this wine is an attribute of the Cabernet Sauvignon Clone 8, and the slight dusty, earth notes are a unique characteristic from the vineyard.” Ray Einberger, Winemaker
Columbia Crest's limited edition Reserve wines are created to highlight particulary special varieties, vineyard sites and AVAs from a vintage.
Hand-picked grapes were crushed with 20% whole berries remaining.
Cold soaking on the skins for two days extracted soft tannins and intense color.
Twice-daily pumpovers during fermentation occurred for 6-10 days to aerate the wine and enhance aromatics and bouquet.
Only 200 cases were produced.
