“Golden in color, this rich, lush Sauvignon Blanc is aged in 100% French oak for four months. A fantastic nose full of tropical fruit, honeysuckle, and peach lead to luscious floral and tropical fruit flavors on the palate. Grapes were de-stemmed, then crushed into a temperature-controlled stainless steel tank.
After 24 hours of cold soaking, the juice was drained away from the skins which were later pressed.
The intensely flavored juice was placed in French oak barrels, 20% new and 80% neutral.
Inoculation began the 14-20 day fermentations and enhanced varietal aromatics.
The wine aged on the lees for four months during which stirring occurred in about 60% of the barrels.
Extreme caution was exercised to avoid malolactic fermentation, keeping aromatics and flavors bright and fresh.
