The 2006 Cabernet Sauvignon Horse Heaven Hills was aged in 40% new French and American oak for 14-18 months. More deeply colored than its less expensive sibling, it exhibits aromas of damp earth, cigar box, violets, black cherry, and black currant. On the palate it is medium to full-bodied, round, ripe, and savory. This medium-long effort will drink well through 2015.

This has satisfying savory aromas of tree bark, tobacco and sundried tomato to complement the dark, plumy fruit. There’s enough of a red tinge to that fruit to give the wine freshness and energy. A steal of a cab and a great choice for grilled short ribs.

The H3 Cab comes across as a more tightly defined, sharp-edged version of the Merlot. Same berry flavors, a bit more acid, and a sense that the wine goes deeper into the palate, though with less breadth. It feels taut in the middle, as if needing more bottle age and/or breathing time to flesh out, but the structure is sound and the flavors clean and varietal.
