Tasting Notes

This wine opens with savory aromatics of cherry kirsch, herbes de Provence, clove, pipe tobacco, and petrichor. Flavors of dried plum enters the palate with plush tannins and focused mid palate. A structure finish lends itself to flavors of brambly fruit and baking chocolate.

WINE ANALYSIS

Blend:
Cabernet Sauvignon, Merlot, and Cabernet Franc.
Aging:
After primary fermentation finished, small individual lots were kept separate and placed into 76% new French oak for 18 months of aging.
Alcohol:
15%
F:
Fruit was picked at the peak of ripeness, destemmed, sorted and placed into small stainless steel tanks for primary fermentation.
